Nose: 'Domina el carácter varietal de la Malvasía Volcánica con aromas terpénico como la rosa, azahar, corteza de naranja, guayaba y ligeros aromas a cereza, guindas provenientes de la fermentación intracelular al que se sometió el vino.'
The El Grifo Winter Harvest White Wine is a testament to the ingenuity and adaptability of viticulture on the island of Lanzarote. This single varietal Volcanic Malvasia comes from five select plots located in various points of the island, including Playa Quemada, Geria, Ye, Cuchillo, and Masdache.
This wine is a fundamental part of a research project that explores a new form of viticulture, particularly relevant in the context of climate change.
Winter harvest, an uncommon practice in viticulture, is carried out meticulously and manually. Grapes are harvested in 18-20 kg boxes, ensuring their preservation and quality. The vinification technique is equally unique, with fermentation carried out with whole clusters, without destemming. This singular technique extracts exceptional nuances from the grapes, including characteristic salinity notes of the region.
Once fermentation is complete, the wine is kept in the cellar with its lees to preserve freshness and enrich it with fine sediments, giving it greater complexity and structure. Subsequently, stabilization and filtration are carried out before bottling.
Early pruning is a central element of this project, driving a new cycle in the vine to adapt to the island's climate. This allows taking advantage of a period of the year with higher precipitation in Lanzarote, countering problems caused by climate change such as water stress, resistance to phytosanitary products, and increased alcohol content in the wine.
