Additionally, the harvest is done manually, carefully selecting the clusters, which are then transported in small boxes to preserve their integrity.
The production process of the Vino Blanco Vetusta Albillo de Oro combines tradition and innovation. After a prefermentative maceration, the grapes are pressed and the must is transferred to oak and acacia barrels, where alcoholic fermentation begins with native yeasts. Once finished, the wine is kept in contact with its lees in barrels for 8 months, adding complexity and texture. Subsequently, it is bottled and rests in the winery for a year, achieving exceptional evolution and maturity before being released to the market.
