Beetroot (Beta vulgaris L.) is a dietary source of natural antioxidants and inorganic nitrates; the natural content of beetroot has been shown to reduce blood pressure and the risk of adverse cardiovascular effects.
How nitrates (NOo3) work in your body: nitric oxide. Inorganic nitrate, or NO3, is a molecule formed by one nitrogen atom for every three oxygen atoms. When ingesting nitrates, most of them pass into the bloodstream (NO3). They are then secreted back into the mouth through the salivary glands. There, they are reduced to nitrite (NO2) by present bacteria. In this form, they are absorbed back into the blood and transformed into nitric acid (NO).
