Wild, fresh and seasonal mushroom. A medium-sized mushroom, with a delicate flavor and great versatility in the kitchen, becoming a highly valued and desired gastronomic product.
Its cap is smooth and uniform, with a color between dark mahogany and reddish-brown; its stem is thick, solid and bulging towards the base, lighter in color than the cap and turning towards reddish-brown; and its flesh is consistent, white, firm and softer than other boletus such as edulis, aereus or reticulatus.
It is also known in our geography as mushroom head, pine boletus, kaskabeltz or andoa doa piñeiros, and is harvested in coniferous forests in the northwest of the Iberian Peninsula mainly in the rainy months of autumn.
Ideal for grilling, griddling or making scrambled eggs and risottos. It combines wonderfully with poached eggs, creamy potatoes, meats, fish, etc. It can also be eaten raw in thin slices with a drizzle of extra virgin olive oil, flaky salt and pepper.
Being a wild natural product, it may contain traces of soil and show alterations in its ripening.
