Fan D'oro is a monovarietal white wine made from the Chardonnay variety, sourced from vineyards located in the "La Planta" estate in the D.O. Ribera del Duero. These vineyards are over 20 years old and are grown in clay-limestone soils, with rock found less than a meter from the surface. The estate, situated at 900 meters above sea level, features a harsh Castilian climate that contributes to a low but highly concentrated grape production. The harvest is done manually, ensuring that each bunch is picked at the optimal time for ripeness. Once harvested, the grapes go through a selection table where they are carefully chosen before being pressed. The production process includes natural decantation overnight, followed by aging in new French oak barrels for 6 months. This production method maintains the elegance and freshness of the wine, resulting in a high-quality final product.
