Cesar Marquez Parajes is a red wine made from Mencía, garnacha tintorera, and other varieties, sourced from the D.O. Bierzo, thanks to the talent of César Marque Pérez. The winemaking of this wine is an art, starting with the destemming of 50% of the grapes, followed by a gentle pressing in the old way, allowing some grapes to remain whole during fermentation. This spontaneous process is carried out using indigenous yeasts from the same grape, giving the wine a unique character. Once the must becomes wine, it is pressed and placed into 225 and 500-liter barrels, where it will age for 12 months. After this time, the blending of the different wines is done. The bodega Castro Ventosa, where it is produced, has a strong family background and is managed by César Márquez, who receives support from the famous winemaker Raúl Pérez. Cesar Márquez Parajes offers a complete sensory experience; it presents itself as a juicy wine with aromas of fresh red and black fruit, herbal notes, and spicy hints. On the palate, it is characterized by its fruitiness, roundness, and breadth, with admirable freshness and a salty finish that makes it irresistible.
