The Tarsus Verdejo 2021 white wine is a jewel of the Rueda designation of origin, made from 100% Verdejo grapes. This wine stands out for its great fruity expression and elegant herbal character, resulting from a careful production process that includes the manual harvesting of vineyards over 35 years old. The grapes, coming from stony soils regarded as the best in the D.O., undergo cold maceration to extract all their potential. After fermentation, the wine rests on its fine lees for four to five months, which, combined with daily batonnage, adds complexity and a creamy texture in the mouth. It presents an attractive pale yellow color with greenish reflections. Its nose is fresh of medium intensity, with aromas of white fruit, aromatic herbs, citrus notes, and hints of anise. On the palate, it is fresh, flavorful, and broad, with a refreshing acidity that makes it very balanced. It finishes with pleasant citrus touches and a characteristic bitterness of the variety.
