The VDulce de Invierno is a wine whose meticulous, long and complex elaboration combines family traditions and innovation. Traditionally, a sweet wine was made from the Verdejo grape by drying it in the family attic, a shady place where the berry loses water and concentrates sugar.

To add aromatic intensity to this traditional wine of the area, after years of testing and micro-vinifications, the muscatel grape was incorporated into this wine, which provides interesting aromas.

Three processes allow the concentration of sugar and aromatic intensity in this wine. 1. Natural drying of the verdejo grape which is spread in the sobrao or attic. 2. The verdejo grape is kept at a temperature always below 4ºC for ten days. When pressed, the water remains frozen while the sugar is squeezed. 3. Late harvest of the muscatel grape, which remains in the vineyard until it is harvested in December, when its sugar content is higher.
