The grapes used in the production of the Haus Klosterberg Riesling come from different vineyards owned by Markus Molitor, mainly composed of slate soils. These vineyards produce fresh and mineral wines. 100% healthy grapes are gently pressed and macerated for several hours with their aromatic skins. After maceration, the juice is fermented by natural yeasts in stainless steel tanks and large wooden barrels. This is followed by aging on lees, which produces a fruity and well-balanced wine.
