During their expeditions in search of vineyards, they discovered that Toro was an exceptional place in 2005, as it had the largest number of centenary and pre-phylloxera vineyards they had ever seen. To make El Pícaro, El Recio, El Viejo and La Jefa, they wanted to fuse the traditional power of Toro's vineyards with the freshness and elegance that characterises all their wines.

In the Toro region, the presence of white grape plots is very scarce, which makes La Jefa an exceptional wine, as it is made from a selection of various white vines found in old vineyards between 50 and 150 years old, amidst predominantly red grapes. These vines are found in sandy soils with a large amount of granitic stony components, and are cultivated in a natural way, following the tradition of the Toro area.

As for its production, a minimal intervention technique was used: the skins were kept in maceration for four hours, a gentle pressing was carried out and a static racking. Fermentation took place spontaneously with indigenous yeasts in new 600-litre French oak barrels, where it was kept in contact with the fine lees.

La Jefa was aged for 14 months in new 600-litre French oak "bocoyes" (large barrels) with light toasting.

Tasting notes of Matsu La Jefa

Appearance: It has a pale yellow colour, bright and with greyish reflections of medium intensity.

Aroma: The nose is very complex and notes of vanilla and ripe pome fruits can be clearly distinguished, together with creamy hints. Light notes of aniseed can also be appreciated, reflecting its ageing in large wooden casks with a sweet character and a great variety of nuances.

Taste: It is a very smooth and unctuous wine, with a very creamy and pleasant texture on the palate. However, it also has a good acidity that makes it very balanced and elegant. It is very pleasant on the palate, highlighting the sweet flavours and a fine texture that enhances its complexity and richness.
