Matusalem Oloroso is a generous wine from the Jerez-Xérès-Sherry designation, created by the prestigious winery Gonzalez Byass. This wine is made using Palomino grapes, which are gently pressed to obtain a must known as "mosto yema", considered the most elegant and delicate. The Pedro Ximenez grapes are processed separately. After fermentation in stainless steel tanks, the Palomino wine is fortified to 18%, while the Pedro Ximenez is fortified to 15.5%. Both wines are combined in a solera, in American oak barrels, where they age in contact with air for an extended period. After 30 years of aging in these barrels, Matusalem Oloroso presents a beautiful mahogany color and a complex blend of aromas, including notes of dried fruits, dates, raisins, spices, and mature wood. On the palate, it is characterized by its sweetness and smoothness, while maintaining notable elegance and complexity, leaving a velvety finish that offers countless sensations.
