The harvest is done manually from two selected plots, and the production process includes a cold pre-fermentation phase lasting 3 to 5 days followed by fermentation lasting between 18 and 20 days in temperature-controlled tanks. Subsequently, the wine ages for 16 months in French oak barrels, 70% of which are new.
