Molto Negre Cava 2024 is a unique sparkling wine made through careful hand harvesting, done in the first week of September at its optimum ripeness. To enhance the characteristic aromas of the variety, the grapes undergo maceration with their skins for two hours. This is followed by a gentle pressing, selecting only the free-run juice to create the base wine, which ferments in stainless steel tanks at a low temperature (16 ºC).
This cava stands out for its secondary fermentation in the bottle, a process that begins with the tirage, when the wine is bottled for its second fermentation. The bottles are stored in the cellar for at least ten months, during which the secondary fermentation and aging occur, greatly enriching its flavor.
Visually, Molto Negre Cava presents a beautiful pale pink hue with bright golden reflections. The bubbles are delicate and small, marked by their continual release. On the nose, pleasant aromas of red fruits and citrus are appreciated, merged with milky notes and subtle hints of pastry. On the palate, this cava offers a tasty start, with perfectly integrated carbonation and a fruity, slightly creamy texture, leaving a fresh and very pleasant finish, accompanied by echoes of liquorice.
