Nimi Ancestral 2022 is a natural sparkling wine, known as pét-nat, made exclusively from Muscat of Alexandria sourced from organic vineyards in Benissa, in the Marina Alta region of Alicante. This wine is produced using the ancestral method, where fermentation starts in the tank and finishes in the bottle without the addition of sulfites, a process that allows it to retain all the character of the terroir and grape variety. The harvest is done manually, and spontaneous fermentation with native yeasts is used, contributing to the uniqueness of the product. By bottling with a touch of residual sugar, a second fermentation in the bottle is promoted, resulting in a fine and natural bubble. In terms of tasting notes, the Nimi Ancestral presents a pale yellow color with golden reflections, showing some cloudiness due to the lack of filtration. On the nose, it reveals fresh and vibrant aromas of white flowers, citrus, and stone fruits, complemented by notes of yeast and a subtle mineral touch. On the palate, the wine is fresh and effervescent, with flavors of white fruit and citrus, culminating in a salty finish that reflects the influence of the Mediterranean Sea.
