Psi 2024 is a remarkable creation from the renowned winemaker Peter Sisseck, located in the prestigious D.O. Ribera del Duero. This wine is distinguished by its community-focused and conservationist approach, working with local growers to protect the rich viticultural heritage of the region. Made primarily from Tinto Fino (Tempranillo) grapes with a hint of Garnacha, Psi benefits from the altitude and clay-calcareous soils of the area. The vinification is done with minimal intervention, using native yeasts and fermentation in cement tanks. The wine ages for 18 months in large cement containers, wooden fudres, and previously used French oak barrels for Pingus. This careful process ensures a perfect balance between the freshness of the fruit and the complexity of the terroir. With a garnet red color and aromas of cherry and licorice, it presents flavors of mixed berries and a mineral touch on the palate, ideal for pairing with red meats and traditional dishes. Serve between 15 and 17 degrees Celsius, preferably decanted an hour before consumption to release its full aroma.
