Sericis Cepas Viejas Bobal 2021 is a wine made from selected grapes of the local Bobal variety, sourced from vineyards in the ‘Medio area. This wine stands out for its meticulous vinification process, beginning with careful destemming and gentle crushing of the grapes, followed by extended maceration at controlled temperatures and an exclusive pumping-over system. After this phase, malolactic fermentation is carried out, contributing to its complexity. Additionally, it undergoes aging in French oak barrels for a minimum of eight months, adding depth and character to the product. On tasting, it presents an intense cherry-red color with a slight brick rim. Its deep and complex aroma recalls forest fruits, with a balsamic background of toffee and vanilla. On the palate, it is fresh, dense, and meaty, with rounded tannins and a prolonged aftertaste. This expression of the Bobal, a native grape from Utiel-Requena, truly showcases the quality potential it can achieve.
