Volandia Mencía, produced by the Mar de Envero winery in Ribeira Sacra, Galicia, is a monovarietal red wine from Mencía grapes. This wine captures the essence of a unique terroir with slate and granite soils, and an Atlantic microclimate. The grapes come from old vineyards on steep slopes, reflecting heroic viticulture. The harvest is done manually to preserve the quality of the bunches. The vinification includes a pre-fermentative maceration, followed by fermentation at controlled temperatures and aging in 400-liter French oak barrels, adding complexity while respecting the fruity freshness. After aging, the wine matures in stainless steel tanks for six months, refining its tannins and structure. This wine stands out for its elegant balance and great aging potential. Its label, created by Martín Romero, reflects the art and tradition of the region. On tasting, it presents a cherry-red color, complex aromas of red fruits and spices, and a silky, lively flavor with a persistent finish. Ideal for pairing with red meats and aged cheeses.
