The SOMMOS Collection Pinot Noir is a distinctive wine that comes from the smallest plot of the Torresalas vineyard, covering almost 1 hectare. Its location in the coldest part of the vineyard and its north-south orientation allow the grapes to develop unique characteristics. The soil where this wine is cultivated is shallow due to the presence of bedrock, composed of rich marls and gray clays, contributing to a rich minerality in the wine. Vinification takes place in open tanks, with gentle Pigeage techniques applied for careful extraction of the grape skin compounds. Fermentation occurs with indigenous yeasts, highlighting the terroir's characteristics. Following fermentation, malolactic fermentation occurs in cement tanks, adding softness and additional complexity to the wine. Finally, the wine rests for 6 months in one-year-old French barrels, imparting subtlety and elegance. This Pinot Noir is perfect to enjoy on its own or alongside light dishes and white meats.
