This wine is produced by the Agrícola Sant Josep cooperative in Bot, Tarragona, using a careful selection of vineyards in the Canaletes River valley. The grapes are hand-harvested at their optimal ripeness and vinified with a short skin maceration followed by cold fermentation, preserving the freshness of the must. After fermentation, the wine is allowed to rest on its lees for two months in stainless steel tanks before being bottled, which adds a delicate texture and a clean, persistent flavor.
