Its production is based on an innovative cryo-extraction process, where Riesling grapes are quickly frozen after harvest, preserving their sugars and acidity. This process, carried out in cryogenic chambers, allows them to concentrate flavors and aromas to reach surprising levels of purity. During fermentation, which takes place in stainless steel tanks for 2.5 months, intense aromas develop, including exotic fruits like mango and lychee, along with candied citrus notes and a characteristic floral touch of the Riesling variety.
