This single varietal of Verdejo comes from selected vineyards where the perfect balance between ripeness and freshness is sought. Its production avoids tropical excesses, opting for the elegance and authenticity of the variety in its natural environment.
One of the keys to its quality is the work on lees for several months after fermentation in stainless steel tanks. This process gives the wine a volume and creaminess on the palate that sets it apart from simpler whites, providing a structure that allows it to evolve favorably in the bottle and be much more gastronomic.
It has a straw-yellow color with greenish reflections, clean and bright. On the nose, it is intense and complex, highlighting aromas of white fruit (pear), citrus notes, and the characteristic touch of fennel and freshly cut grass typical of Verdejo. On the palate, it is broad, with a glyceric entry and a passage marked by vibrant acidity that refreshes the palate. Its finish is long and slightly bitter, very elegant. Ideal to accompany white fish, seafood, rice dishes, warm salads, and fresh or semi-cured cheeses.
