Kripta Barrica Gran Reserva
For its production, traditional cava varieties are used: Macabeo, Xarel·lo, and Parellada. The harvest is done manually, selecting the best grapes. Fermentation takes place in French oak barrels, which adds greater complexity and structure to the wine. After fermentation in barrels, the cava undergoes a second fermentation in the bottle according to the traditional method. Subsequently, it is aged on lees for a minimum of 30 months. The disgorging is done manually without the addition of expedition liqueur, resulting in a brut nature cava.
As for pairing, it is ideal to accompany fresh seafood such as oysters, shrimp, and lobster. It is also perfect with grilled or baked white fish. It pairs well with soft and creamy cheeses like brie or camembert. Additionally, it is excellent with white meats such as chicken or turkey, especially if cooked with light sauces. It pairs well with appetizers and tapas like Iberian ham, toasted almonds, and olives. It can also be paired with light desserts, especially those based on fruits.
