The Llicorella Pedro Ximénez white is a modern and bold interpretation of this variety in the DOQ Priorat. Grown on slate soils (llicorella), the grape loses its purely sweet profile to gain an astonishing verticality and mineral expression. In its version as a dry white wine, it typically presents a straw-yellow color with golden highlights. On the nose, it surprises with notes of ripe white fruit, fennel, and a pronounced character of dry stone and graphite. On the palate, it is a full-bodied, dense, and glycerin-rich wine, yet marked by a mineral freshness and a salty finish that makes it long and profound.
