The production includes careful manual harvesting to select only the best grapes, which are then delicately transported to the winery to prevent damage to the fruit. Once at the winery, the grapes are destemmed and gently crushed to release the must, which is fermented in stainless steel tanks at controlled temperature. This helps preserve the primary aromas of the fruits. During fermentation, pump-overs are carried out to ensure adequate extraction of color and tannins. Subsequently, the wine remains in contact with the skins for greater maceration, thus contributing to the wine's complexity. Afterward, Condado de Oriza Roble is transferred to American and French oak barrels where it ages for six months, imparting subtle notes of wood, vanilla, and spices while preserving its fruity character.
