Sierra Cantabria Cuvee is a wine made from grapes from the estate's own vineyards in Labastida and Laguardia. With 12 months of aging in oak barrels and a meticulous selection process, it offers aromas of ripe red fruit and spicy notes that make it balanced and harmonious.
Sierra Cantabria Cuvee is produced from grapes from the estate's own vineyards located in Labastida and Laguardia. The vines, averaging 30 years old, grow in clay-calcareous soils and are nourished exclusively with organic fertilizer. Harvesting is done manually to ensure that only the best bunches are selected, both in the vineyard and at the winery.
The production process follows traditional methods, beginning with a cold pre-fermentation maceration lasting 48 hours and culminating in fermentation with the skins for 20 days. During this period, two pump-overs are performed daily, which are adjusted to one every two days during the maceration phase. After fermentation, the wine ages for 12 months in Bordeaux barrels made up of 60% American oak and 40% French oak.
Sierra Cantabria Cuvee stands out for its aromatic complexity, combining notes of ripe red fruit, such as cherries and strawberries, with spicy touches, vanilla, and hints of toasted oak. On the palate, it has a strong presence and volume, offering notable balance in its structure due to the mature tannins that provide a concentrated and harmonious flavor. Perfect for pairing with a variety of dishes or enjoying it alone.
