Oro de Cánava Early Harvest Picual Transparent 500 ml is an extra virgin olive oil from early harvest, made 100% with Picual variety olives, from the olive groves of Sierra Mágina, Jaén. Its unique character and exceptional quality have earned it prestigious awards at national and international level.
It presents an intense fruity green olive flavor with complex aromas of mint, tomato plant, banana peel and hints of almond and apple. In the mouth it is balanced, with a light bitterness and progressive spiciness, with great structure and persistence. Its transparent and fragrant flavor reflects the purity of the olives harvested at their optimal point.
The selection begins in the olive groves, carefully separating the olives from the tree from those on the ground to guarantee maximum quality. Once harvested, they are transported to the mill in Sierra Mágina, where they are cleaned and bathed with spring water before being crushed by hammer mill. The resulting paste is subjected to centrifugation in a two-phase system at controlled temperature ( max. 22ºC ) to extract the oil, preserving its organoleptic properties. Finally, the oil is transferred to tanks in the cellar, where it rests until it reaches its optimal degree of maturity.
Ideal for raw consumption, enhancing the flavor of salads, toast, grilled vegetables, meats, fish and cheeses. It is also perfect as a finishing touch in gourmet dishes or delicate sauces.
