Fermentation and subsequent aging in 7 new French oak barrels for 9 months. The wine has remained in contact with fine lees and has been bottled by hand.
It has a clean, bright color with straw tones. Intense nose, fragrant, with hints of minerals: flint and limestone slate. In the mouth it is fresh and citric, while oily due to its time on the lees. Good structure for a white wine.
It pairs perfectly with oily fish, such as turbot or sea bream. Perfect with fresh grilled foie and all poultry stews.
