White wine made 100% with grapes of the Albillo Mayor variety. It comes from isolated vines that have to be selected in organic vineyards between 60 and 100 years old, located in the area of Olmedillo, Nava de Roa and Villalba. With sandy soils over limestone.

Fermentation and subsequent aging in 7 new French oak barrels for 9 months. The wine has remained in contact with fine lees and has been bottled by hand.

It has a clean, bright color with straw tones. Intense nose, fragrant, with hints of minerals: flint and limestone slate. In the mouth it is fresh and citric, while oily due to its time on the lees. Good structure for a white wine.

It pairs perfectly with oily fish, such as turbot or sea bream. Perfect with fresh grilled foie and all poultry stews.
