This Fino is the latest wine to join Bodegas Tradición. The first bottling took place in March 2013. Each year two different bottlings are made, one in late autumn and one in spring. In this way, the effect of the flower in both seasons, which are so influential in biologically aged wines,is contrasted, and the wine has been aged with a veil of flor using the solera and criaderassystemfor 10 to 12 years. It is reminiscent of the old styles of fino: well-made wines to accompany main courses at the table. A wine with full maturity, dry, saline and very complex. It is the perfect accompaniment to olives, fried almonds and salted fish in an aperitif. It is also extraordinary with ham and Iberian pork loin. It also goes very well with cooked prawns and shrimps, grilled fish and seafood.
