Fraga do Corvo Mencía is a standout red wine from the Monterrei Denomination of Origin, crafted by the well-known project of Grandes Pagos Gallegos de Viticultura Tradicional. Its production is led by the prestigious winemaker José Manuel Martinez Juste, who also works at the Quinta de Couselo winery. This wine is made from Mencía grapes sourced from historic slopes in Monterrei. The harvest is conducted manually in 15 kg boxes, ensuring careful selection of the grapes. Once in the winery, the grapes are cooled to 5°C, followed by meticulous sorting on a vibrating table, hand destemming, and a two-week cold maceration. The fermentation occurs in 500-liter French oak barrels, where the wine also undergoes aging. After malolactic fermentation, the wine is divided into two parts: one part remains in stainless steel tanks while the other ages in fine oak barrels for 7 months. Finally, it receives a minimum of three months of bottle rest before entering the market.
