The elaboration of this vinegar has its origin in the old VIDES cellars that functioned as warehouses in the purest artisan and traditional style.
Once its aging period is over, it is removed from the cask and a portion of Pedro Ximénez sherry wine is added, resulting in Alcaidesa 1850 Pedro Ximénez Sherry Vinegar. From its origin, this vinegar progressively acquires darker and darker tones, first amber and, with time, mahogany. On the nose it has a powerful aroma full of hints of vanilla, raisined fruits typical of the Pedro Ximenez grape, and wood. On the palate, it is smooth, fruity and ample, with an exquisite and penetrating flavor.
Exceptional with Asian cuisine, salads or tuna tartar.
