Manzanilla Pasada Solear en Rama Saca Estacional Otoño 2022 is a fortified wine from D.O. Manzanilla-Sanlúcar de Barrameda produced by Bodegas Barbadillo from 100% Palomino Fino grapes. It is part of the series of seasonal sacas that the winery bottles directly "en rama", from the butt to the bottle , without aggressive filtrations, in order to preserve all the authenticity of the biological aging.
This manzanilla comes from the famous Solear solera, which after about 6 years of biological aging under a veil of flor continues to age in cask for about two more years , reaching the style of manzanilla pasada , more concentrated and complex. Four sacas are made each year - spring, summer, autumn and winter - reflecting the aging conditions of each season.
The nose is intense and elegant, with characteristic notes of organic aging, almond and saline nuances. On the palate it is dry, tasty and persistent , with greater depth than a young manzanilla but maintaining freshness and liveliness. Ideal with Iberian ham, seafood, fish or Japanese cuisine , and to enjoy very cold as an aperitif.
