The artisanal process begins with cooking in an underground wood-fired cone oven using white oak wood. The milling is done in a stone mill, pulled by a horse named "Sansón." The fermentation is natural, occurring over six days in 800-liter wooden tanks using native yeasts. The mezcal is distilled in 250-liter copper alembics in two stages, and in a third distillation, a mix of spices, seasonal fruits, and a free-range hen breast is added, hung in the cap of the alembic, giving it unique flavor and aroma. The final product is colored with Grana Cochinilla, providing its distinctive pomegranate red color.
