Mezcal Los Danzantes Pechuga is a high quality artisanal mezcal made by master mezcalera Karina Abad Rojas. Using Espadín maguey (Agave angustifolia) grown in the Valley and Sierra Norte region of Oaxaca, this mezcal follows an artisanal process that includes cooking in a conical wood-fired oven underground with white oak wood, grinding in a stone mill pulled by the horse "Samson", natural fermentation for 6 days in 800 L wooden vats with native yeasts, and two discontinuous distillations in 250 L copper stills.
In the third distillation, different spices, regional seasonal fruits and a ranch hen breast hung in the alembic's top still are added. Once distilled, it is dyed with Grana Cochinilla (Dactylopius coccus), giving rise to its characteristic pomegranate red color.
