Vinification begins with a careful selection of grapes, hand-picked in 15 kg boxes, then cooled for 24 hours to preserve their characteristics. They ferment in French oak vats, producing a wine of great flavor depth. After 40 days, malolactic fermentation starts in French oak barrels, where the wine ages for a total of 22 months. Finally, the wine is bottled unfiltered and unrefined and allowed to rest for a minimum of 40 months in the cellar before marketing.
