Palo Cortado Tradición VORS 30 years (NV) is a fortified wine from D.O. Jerez-Xérès-Sherry produced by Bodegas Tradición , a sherry house specialized exclusively in very old wines certified as VOS and VORS. This category indicates an average age of more than 30 years , certified by the Regulatory Council, which places these wines among the rarest and longest-lived of the Marco de Jerez.
It is made from Palomino Fino and aged for more than three decades in American oak casks following the traditional system of criaderas and soleras , combining a first phase of biological aging with a long oxidative evolution. This process results in a wine that combines the aromatic finesse of an amontillado with the structure and depth of an oloroso , a characteristic feature of the palo cortado style.
The nose stands out for its enormous complexity, with aromas of bitter almonds, hazelnuts, candied fruit and balsamic notes , along with saline hints typical of the wines of the Marco de Jerez. The palate is dry, deep and very elegant , with a silky texture, great concentration and an extraordinarily long finish where nuances of nuts and spices reappear. It is an ideal wine to accompany cured cheeses, Iberian ham, nuts or game dishes , although it is also enjoyed as a wine of contemplation.
