This unique red comes from a small 1.8-hectare plot located at 775 meters above sea level, providing an ideal microclimate for the cultivation of its old pre-phylloxera vines, planted in goblet style. The soil of the plot is extremely calcareous and covered with pebbles, contributing unique characteristics to the grapes. After harvesting, the grapes are hand-picked, berry by berry, ensuring the highest quality in the process. Subsequently, malolactic fermentation takes place in a special French oak egg-shaped vessel, known as “Ovum,” from the renowned cooperage Taransaud. This innovative process allows the wine to develop a silky texture and an elegant profile. The aging of the wine is completed in three new fine-grain French oak barrels from Bordeaux, lightly toasted, over a period of 24 months. The result is a truly integrated and complex wine that promises an exceptional experience in every sip, ideal for pairing with elaborate dishes or enjoying on special occasions.
