The Virgen de Galir Sede e Fame 2019 is an extraordinary wine from the Valdeorras denomination of origin, made exclusively from Palomino grapes from historic plots in the As Ermitas region, located in the Val do Bibei. These vines, planted in the early 20th century, grow on stone terraces at 750 meters above sea level, thriving in decomposed granite and slate soils, which impart a unique expression deeply tied to its origin. Harvesting is done manually, preserving the purity of the bunches through whole bunch pressing. Fermentation occurs spontaneously in clay amphoras and traditional barrels, followed by 24 months of aging, contributing to its complexity. It presents aromas of wet stone, balsamic notes, herbal, and saline nuances on the nose. On the palate, it stands out for its freshness, tension, and saline minerality, complemented by well-integrated acidity for a long and elegant finish. Ideal for pairing with smoked fish, seafood, and aged cheeses, it is recommended to serve at 10 to 12 ºC.
