Delicate and intense sweet wine of natural fermentative grade obtained from the Ximénez-Spínola house's own yeasts, produced by hand harvesting on traditional harvest days.
Obtained by hand from 100% Pedro Ximénez grapes, raisined in the sun, carefully laid out on the ground on food mats in the "camadas", as the streets between the vines are known. Only 300 kilos of raisins are obtained for each ton of initial fresh grapes, and after a slow extraction in the property's pressing press, only 200 liters of must are obtained for each ton of fresh grapes, resulting in a very low final yield.
Fermentation is carried out at 13% alcohol in open French oak barrels to continue with the barrel hermetically sealed, which slows down the alcohol conversion process and favors the conversion of aromas and fruit flavors without the possibility of oxidation. Each bottle is numbered as proof of its authenticity.
