The White Wine Biniagual Dolç from Biniagual winery, has Designation of Origin Binissalem (Mallorca), made with the Muscat of Alexandria variety, the overripe grape is harvested in small boxes of 10 to 12 kg, selecting the grapes manually. Cold maceration is carried out in a carbonic atmosphere, followed by gentle pressing with carbonic protection at low temperature and cold settling for 48 hours. Fermentation begins in stainless steel tanks at a controlled temperature of 17 degrees. Halfway through fermentation, the process is interrupted to preserve the sweetness of the wine.
