The White Wine El Secreto Finca Élez is an extraordinary organic wine made from 100% Viognier grapes grown in the Pago wine region of Spain. It is characterized by freshness, minerality, and a limited production of only 2600 bottles. The production begins with a careful early morning harvest, followed by low-temperature maceration. Fermentation and aging are done in 2000-liter French oak foudres, controlling the temperature to preserve its unique characteristics. During 10 months of aging on lees, the wine develops remarkable creaminess and complexity, thanks to careful batonnage.
