The D.O. Manchego cheese aged Adiano (wedge) is a cheese with a designation of origin that is traditionally made from raw milk of purebred Manchega sheep fed in the pastures of El Campillo estate (Ciudad Real) at the foot of the Toledo mountains.
The artisan D.O. Manchego cheese Adiano has become the most awarded nationally during the 2024 World Cheese Awards, held in Portugal, having won three Super Gold medals in a single competition. In the previous edition of the WCA, in Wales, it won the Gold medal.
Specifically in this new edition of the World Cheese Awards it has achieved: Best semi-hard sheep cheese in the world, Best sheep cheese for the Reserve version, and Adiano Aged was distinguished as the best Manchego cheese DOP in the world. Adiano has already won more than 30 awards since its launch in 2022.
It is a cured cheese made from unpasteurized sheep's milk, without additives or preservatives that matures in its own mold, making its completely natural rind 100% edible.
This artisan D.O. Manchego cheese aged Adiano has exceptional quality and its organoleptic qualities, in which natural ferments are preserved, give it nuances of flavor and aroma that stand out in its category.
All the sheep on the farm enjoy a state of semi-freedom where they alternate daily time in the field grazing, playing, sunbathing, or resting. The barns where they rest have been designed with the latest available technology focused on animal welfare (Animal Welfair™), where they are milked or spend the night to shelter from the weather.
In addition, the cheese factory has a waste treatment plant that minimizes the impact and ecological footprint, contributing to becoming a 100% sustainable brand.
We recommend pairing this aged Adiano cheese with red wines from La Mancha since their robust notes perfectly complement the intensity of this aged artisan Manchego cheese.
