Cheese Mena was born in 2017 as a family-owned and completely artisanal cheese factory, where cheeses are pampered and elaborated one by one from the beginning to the end of the process. This allows us to guarantee a high quality product.
Artisan matured cheese made with pasteurized milk from Florida goats, enzymatic coagulation, pressed paste, without additives or preservatives, salted in brine. It has a minimum maturation period of 45 days in a cellar. It is refined with lard on the rind, with successive turnings during this time for a uniform maturation. It may have presence of natural molds on the rind.

TEXTURE AND COLOR:
Its exterior appearance is cylindrical, with a thin and hard rind rubbed in lard with a yellowish to ochre color, completely edible. The interior presents a closed paste, without eyes and very creamy, with a white color and firm texture, slightly elastic turning fragile in longer maturation periods.
FLAVOR AND AROMAS:
Intense smell with hints of mold and goat but never unpleasant. Intense aroma in the mouth and long-lasting presence. It has small acidic touches.
INGREDIENTS:
Pasteurized goat milk, rennet, lactic ferment, and salt.
RECOMMENDATIONS FOR STORAGE:
• Open the vacuum bag a few hours before consuming.
• Once opened, store in a dry, cool place and within a non-hermetic container.
• Not recommended to store in the refrigerator as it loses aromas and dries out from cutting.
• Optimal consumption temperature: 20º - 25º.
FORMAT:
Vacuum packed. Half pieces between 350-400 gr approx. Whole pieces of 750-800 gr approx.
PREFERRED CONSUMPTION: Best before date of 1 year.
