Antídoto is one of the Riberas from the Soria region that is causing a lot of buzz, due to its character and wide range of flavors. These are old vines at high altitude, which produce a fresh and mineral wine, very interesting.
Antídoto is the project of Bertrand Sourdais, who has worked on great wines from France such as Château Léoville-Las Cases or Mouton Rothschild.
Antídoto is a single-varietal wine made from Tempranillo grapes. The harvest is done naturally. The pre-fermentation lasts 3 days and is carried out at a temperature of 12ºC. The fermentation lasts 6 days at a temperature of 25ºC.
Finally, the aging takes place in semi-new French oak barrels for 12 months.
Antídoto is ideal to accompany pork, pasta, and duck.
It is recommended to serve at a temperature between 14-16ºC.
