Cantabrian Anchovies Don Bocarte are a true delicacy, handcrafted in Santoña with the best pieces caught during the coastal campaign (April-June), the optimal time to achieve maximum quality in texture, flavor, and aroma.
These anchovies, meaty and boneless, are cured in salt for a minimum of 10 months in barrels at controlled temperature (18-22°C). This maturation process allows to develop all the characteristic nuances of the product: subtle aromas, creamy texture, and a balanced saltiness.
Once matured, they are carefully filleted by hand and marinated in a special blend of extra virgin olive oil with a fruity and smooth profile, which enhances the flavor of the anchovy without masking it.
Each jar contains between 16 and 18 selected fillets, ideal to enjoy on toasted bread, with grated tomato, avocado or soft cheeses, and always at room temperature (12-15°C) to appreciate all its organoleptic richness.

Consume between 12 and 15°C. Serve with grated tomato, avocado or soft cheese on toast. Also ideal as an appetizer with crispy bread and a dry or sparkling white wine. To enjoy its balanced flavor, consume from 10-15 days after production, when the anchovy has already been marinated with the oil.
