Tasting notes:
In appearance, coppery salmon color, clear and bright. Fine, perfectly integrated, and persistent bubbles. On the nose, very evocative, with floral aromas, red fruit such as medlar cherry and sloe, candied stone fruit like peach, and spicy notes. On the palate, it is fresh, delicate, and very expressive. The notes of red fruit combine with aging notes with a long and elegant finish. Served in wide and deep chalice glasses, like those used for chardonnay tasting, it unfolds all the complexity of its aromas.

Geology and Soil:
The Pinot Noir vineyard is located in the Massif of Garraf, in the Upper Penedès, at an average altitude of 211 meters and a Mediterranean climate. The soil is poor, slightly calcareous, with a high content of disintegrated slate rock, and with low water retention capacity. The vines are around twenty years old. The vineyard's production is 7,000 kg/ha, well below the usual average which usually ranges between 10,000 and 12,000 kg/ha. According to the PERE VENTURA philosophy, viticultural practices are carried out following sustainability criteria and respect for the environment, trying to intervene as little as possible in the vine and its surroundings, accompanying the vineyard throughout its lifecycle until the optimal moment for harvesting. Harvesting is done manually, and there is a double selection of the grapes, in the vineyard and on the selection table.

Production:
The stems are removed from the grape (destemming) and it is directly placed into the press. Part of the grapes is directly pressed and the other part is left to macerate for eight hours to obtain different profiles: floral in short macerations and fruity in long ones. After the pre-fermentative maceration, a gentle pressing at 0.5 bar is carried out with a maximum extraction of 55% of the must. Static settling and fermentation for twenty days in stainless steel tanks between 15 and 17 ºC. Second fermentation in the bottle following the Traditional Method.
