Martelli is a magnificent Italian family of traditional pasta makers since 1926. Only members of the family work in the company.
The pastificio is located in Lari, a small village halfway between Florence and Pisa, on the top of a hill overlooking the main Arno Valley.
The process of making Martelli pasta continues as in the past, after kneading, it is cut in bronze moulds and then dried at a temperature of between 33 and 36 degrees centigrade for about 50 hours. Thanks to this way of proceeding, a rough texture pasta is obtained, with great flavour and porosity, which guarantees the total absorption of the sauces and a formidable taste.
