The jams are made with a lot of love, in the old-fashioned way, in a saucepan and with a wooden spoon.
To the mandarin jam, pieces of cherries macerated in brandy are added. It does not contain alcohol because it evaporates during cooking.
In this mandarin jam with cherries in brandy, only fruit and sugar are used, without preservatives or additives.
A minimal amount of sugar is used, enough to allow for good preservation and to give it that sweet touch of jams.
The privileged environment in which this orange jam with white chocolate is made, in the heart of the Tiétar Valley, allows for the use of a variety of local fruits such as figs (La Adrada and Pedro Bernardo), chestnuts (from Casillas or Mijares), peaches (Navaluenga), and kiwis, peaches, and cherries from El Hornillo.
