The Ibérico Cebo Ham (50% Ibérico Breed) is a ham from the Ibérico pig. It comes from pigs that are descended from at least 50% purebred Ibérico pigs.
The Ibérico ham is prepared by the ham masters of "Jamon España". Carefully removed from a whole Ibérico ham and manually, mechanically pressed to achieve a uniform slice yield. The piece is boneless and rindless, and has a low fat content.
Unlike the Bellota hams, the pigs used for Cebo hams do not exclusively grow up in the wild, but instead gain weight until slaughter in a diet of grains. Therefore, the Ibérico ham is labeled as Cebo, the Spanish word for grain feed, to differentiate it from the acorn-fed (bellota) ham.
