The Ibérico Cebo Ham (50% Ibérico Breed) is a ham from the Ibérico pig. It comes from pigs that are at least 50% descended from purebred Ibérico pigs.
The Ibérico ham is prepared by the ham masters of "Jamon España". Carefully removed from a whole Ibérico ham and manually, mechanically pressed to achieve a consistent slice yield. The piece is free of bones and rind and has a low fat content.
Unlike the Bellota pigs, the Cebo ham pigs do not exclusively grow in the wild but instead gain weight in the grain feeding until slaughter. Therefore, the Ibérico ham is labeled as Cebo, the Spanish word for grain feed, to distinguish it from the acorn-fed (bellota) ham.
