Because of the dates on which these vineyards ripen, it is very common that we can organize the manual harvest on very cool mornings, so we can vat the destemmed grapes at temperatures around 10 ºC; being able to extend the maceration before alcoholic fermentation begins. This allows us, with short vatting, very aromatic wines with intense color.
