It is aged in barrel in the presence of its lees for 4 months and then aged in bottle for a minimum of 8 months.
The origin of this variety is recent. Coming from the natural mutation of a red variety vine, the DOCa has put special interest in developing this grape as a complement to the Viura variety. The wine was fermented in new 225-liter barrels of French Allier and Vosgues oak and American oak from Ohio, in order to respect as far as possible the aromatic qualities of the variety. It is then aged in the same barrels in the presence of its lees for 6 months with weekly battonages.
